Here's a quick and easy recipe inspired by one of my favorite holiday drinks - a peppermint mocha!
Our version - a Candy Cane Coffee Syrup - is made with real peppermint and vanilla for a delicious candy cane flavor. I made a mocha version as well with the addition of a little cocoa powder. If you find that your syrup is thicker than you'd like, just thin it out with a touch of hot water.
You can also steep your peppermint like tea in the water before adding sugar, and it will be easier to strain. Make sure to keep covered so that steam does not escape and reduce your syrup too much.

How to Make a DIY Candy Cane Coffee Syrup
2 cups sugar
1 cup water
3 cups fresh peppermint leaves
1/4 vanilla bean, scraped
1.5 TB cocoa powder
pinch of salt
Steep peppermint + vanilla (beans and pods) in sugar + water on low heat, covered, for 30 minutes 1 hour. Strain. Add cocoa and a pinch of salt for a candy cane mocha! Store in an airtight container in the fridge for up to one month. Makes a great homemade gift! Watch the video for a demo ->
