Slow-cooking the sugars in peaches (and on top) will cause them to caramelize a little and the peaches will cook down into a jammy, pie-like texture without much added sugar and basically no work! Fine by me! :)
Jammy, Roasted Peaches Recipe:
Preheat oven to 325 degrees (F).
Cut peaches in half and dip flesh in granulated or finely processed sugar.
Place peaches cut side up on a sheet pan and bake for 25-35 minutes, until peaches are cooked down and starting to release juices.
You can stop here for firmer peaches (for a salad or such), or continue cooking low until peaches are soft. Enjoy hot or cold!
