Icy treats are a warm-weather staple, something I learned growing up in hot, humid Dallas, TX. The weather doesn't get too extreme out here in sunny Napa Valley, but it's still nice to cool off with something fresh, delicious, and ice-freakin-COLD. Since this Dole Whip recipe is dairy (heavy fat) free, it's a light and refreshing but still feels indulgent enough to be a treat.
Ice creams and dairy-rich desserts can be rough on the tummy, (yes, I speak from experience) so this blend of real, frozen pineapple and creamy coconut milk hits the spot without hurting if you're sensitive to those kinds of things like me. Inspired by the legendary Dole Whip you can find at Disneyland, here's my pineapple soft serve recipe with a touch of coconut milk - add a few scoops of this Dole Whip inspired soft-serve to fresh pineapple juice for a homemade version of a Dole Whip float.
